Dr. Fabiola Araceli Guzmán Ortiz holds a PhD in Food Sciences from the National School of Biological Sciences of the National Polytechnic Institute (IPN), Mexico. She has completed research stays at institutions such as the United States Department of Agriculture (USDA) and the Institute of Food Science, Technology and Nutrition (ICTAN) in Madrid, Spain. She currently serves as a Research Fellow for Mexico at the Secretariat of Science, Humanities, Technology and Innovation (SECIHTI), affiliated with the Autonomous University of the State of Hidalgo. She is a member of the National System of Researchers. Her research focuses on the composition and analysis of foods, food proteins, bioactive compounds, and the valorization of agricultural products and byproducts, especially those derived from cereals and legumes. She also works with technological processes such as germination and extrusion, aimed at improving the nutritional and functional value of foods.
