My current research interest concerns starch chemistry, phenolic compounds, dietary fiber, and their bioavailability. Also, I am interested in developing functional foods and new materials with biomedical applications. I am working on the functionality and bioavailability of Capsicum annuum bioactive compounds and grapefruit, as well as the development of films with pecan and grapefruit byproducts.
