Dr. Figueroa works in the Area of Bio-organic materials at CINVESTAV-Unidad Querétaro (Center for Advanced Studies and Research Campus Querétaro). His areas of special expertise are: the Maxwell (stress relaxation) and Kelvin-Voigt (Creep) generalized models for studying the visco-elastic properties of hard food materials. Ultrasound. Microwave, Infrared and other non-conventional energies in grains and food processing. High fiber-low fat tortillas to prevent obesity, diabetes and cardiovascular diseases. Characterization of bio-materials by FTIR, DRIFTS, Impedance, ultrasound, X-rays diffraction, SEM, DSC, óhmic heating. Dr. Figueroa has published 170 scientific articles among them there are 5 books and 10 chapters in books and 26 patents. Regarding to the legacy to the Science and Technology, Dr. Figueroa had contributed to the following inventions: Dry nixtamalization technology; Wet ecological nixtamalization to produce a whole-grain tortilla; Ohmic process; Tortilla baking using IR radiation; Tortilla baking process using TV electromagnetic waves among other technologies.
