Dr. Rosalía Reynoso Camacho has a PhD in Science with a specialty in biochemistry and is currently a research professor at the Universidad Autónoma de Querétaro. Her research has focused on the study and development of functional foods that promote health, with particular emphasis on the use of agro-industrial waste and traditional Mexican foods. In this context, she also addresses agricultural production, exploring agricultural practices and innovative technologies to improve the nutritional content and bioactive compounds of foods, particularly benefiting the most vulnerable populations. In addition, it works on the valorization of agro-industrial by-products to develop supplements, snacks and healthy beverages, with emphasis on innovation of formulations and their evaluation in terms of efficacy. Its objective is to contribute with food solutions that improve access to products that are not only nutritious, but also help prevent and control prevalent diseases in Mexico, such as obesity, diabetes and cardiovascular diseases.
During her career, she has obtained funding for more than 30 projects from institutional, state, federal and industrial entities. Throughout her career, Dr. Reynoso has trained 100 undergraduate and graduate students. Her work has resulted in the publication of 134 scientific articles with more than 3,400 citations, and she has edited two books. In addition, she has received regional, national and international awards and recognitions, reflecting the relevance and impact of her research in the scientific and social fields.
