I graduated from the Monterrey Institute of Technology in the field of Food Science, later on got my MS and PhD from Cornell University. I have taught graduate and undergraduate courses in food science and technology, bioentrepeneurship, toxicology and new product development. My research has focused on food safety and sustainability as well on biopolymers. I currentlt work at the Universidad Anáhuac Mayab as a senior scientist.
